Enoki Beef Rolls with Egg – A Comfort Bowl After Work
After a long 9–5 day, I honestly just want something quick but comforting. That’s when this dish came to mind—Enoki beef rolls. If you’ve been on TikTok, you’ve probably seen it everywhere. Back then, I skipped it because it felt “too easy.” But now, on busy nights, easy is exactly what I need.
It takes barely any effort: roll thin beef slices around enoki mushrooms, sear them, pour in a simple soy–mirin sauce, then finish with eggs. In just a few minutes, you get juicy beef, crunchy mushrooms, and soft eggs soaking up all that sweet-savory flavor.
I had it with a bowl of white rice, and it was perfect. Simple, cozy, and honestly the kind of meal I could keep making again and again.

Ingredients (1 serving)
150g enoki mushrooms, trimmed and separated
120g thinly sliced beef (hotpot style)
2 eggs
Garlic, minced
Onion, thinly sliced
Soy sauce + mirin (1:1 ratio)
Instructions
Roll enoki mushrooms with thin slices of beef.
Sauté garlic and onion until fragrant, then sear the beef rolls on both sides.
Once the beef is just cooked, pour in soy sauce–mirin mixture until it lightly covers the rolls.
Beat 2 eggs, pour into the pan, cover, and cook for 30 seconds–1 minute until just set.
The eggs wrap around the juicy beef and mushrooms, soaking up the sweet-savory sauce. Serve hot with white rice.
